Pastry-less Mini Quiches

Pastry-less Mini QuichesPastry-less Mini Quiches  (quick and easy recipe)

300 grams of chopped cooked spinach
3 eggs
100 grms of grated cheddar cheese
50 grms finely chopped green peppers
50 grams finely chopped onions
3 drops of Tabasco sauce (optional)

Drain excess liquid from spinach  -  grease a 12 x bun tin

Combine eggs, cheese,  pepper, onion, spinach and Tabasco sauce.  Mix well.   Divide evenly into bun tin (or use muffin cases)   Bake at 180 Gas 4 for about 20 minutes.

These mini quiches freeze well and reduced fat cheddar can be used if you are watching the waistline
